Just today I began jotting down every concert I can remember going to. What bands/musicians are on your list? Who do you hope and pray to see one day? AND... who do you just wish you could've seen before they died? For me, this list includes: Johnny Cash (of course), Bob Marley, and John Hartford.
Here's my list:
The Chieftains, John Mayer, Nanci Griffith (four times I can remember), Lucinda Williams (three times I can remember), Bonnie Raitt (front row!), Indigo Girls (front row as well!), Grand Ole Opry, Blind Boys of Alabama, Michelle Shocked (at least twice), Nickel Creek, Eddie From Ohio, David "Dawg" Grisman (twice), Alison Krauss, Social Distortion, Beck (twice- AND I met him!), The Flaming Lips, Vance Gilbert, Tony Furtado, Delbert McClinton, Deb Talan from The Weepies, Emmylou Harris (front row as well), Cowboy Junkies, Greg Brown (twice), Ben Kweller, and Doc Watson.
Phew! If you're still interested, here are a few reasons why I sometimes wish I didn't live in Utah and why I still keep my fingers crossed. Someday, someday...
The Rolling Stones, Bruce Springsteen, John Prine, Tom Petty, Neil Young, Willie Nelson, Bob Dylan, Taj Mahal, and Paul Simon.

The list is long. It starts with New Order and ends with Black Rebel Motorcycle Club.
I would love to have seen: Lennon, Johnny Cash, John Denver, and the late great Jeff Buckley.
Who I'd like to see: Gloria Estefan (go ahead and laugh..but I like her), Elton John, Neil Diamond, Journey and The Eagles.
I'm sure there are more to recall but this is my list, for now.
I wish I could have watched J. Cash also. Hank Williams Sr. would have been magic, check out footage of him performing "Cold, Cold Heart" at the Opry. As for now, I would love to see Bruce Springsteen performing the entire Nebraska album.
